Sugar free Anjeer Dry fruits Sweet

Take 15-20 Figs/Anjeer and soak it for 3 hours in milk.
Take 15 Cashews, 15 Almonds, 15 Pistachio and cut it into medium sized pieces.
Chop the soaked figs into very fine pieces. Don’t be tensed as the texture of figs would change and might see little unpleasant.
Heat a non stick pan and add pinch of ghee in it. Add these soaked figs into it and steer it continuously.
Keep crushing it while steering and steer it till it leaves the pan and takes a solid ball shape.
Add chopped dry fruits to it and again steer it so that dry fruits and fig paster again create a solid ball
Take a butter paper/polythene and put khuskhus seeds on it. Pour this hot paste on it and with the help of a polythene try to give shape to this mixture.
Don’t use bare hands to do it as it will stick to your hand.
Cover this mixture with polythene and refrigerate this for about 45 minutes.
Remove it from the refrigerator and cut it into pieces as per your like.

The recipe is quite simple.

Ingredients:

150 gm Khoya or Mawa
150 gm Desiccated Cocunut / Narwal Boora
70 gm Sugar
Small pieces of dry fruits for garnishing


Step1: Heat the pan and add Khoya into it. Steer it continuously for about 10 minutes till it changes it colour and become smooth - Low Flame
Step2: Add desiccated coconut into the Khoya and mix it till it becomes a smooth mixture. Switch off the stove - Low Flame
Step 3: In parallel to this, we will create thick sugar syrup with water to sugar concentration as 1: 2. Add 1/2 bowl Water into a container and add 1 bowl sugar into it. Boil it till it becomes very thick and sticky. Make sure that the syrup it translucent in colour and should not change to light brown/brown - Low Flame
Step 4: Add the hot sugar syrup to the khoya and coconut mixture and steer it and mix it properly.
Step 5: Grease a plate with Ghee or clarified butter and put this mixture on it. Spread the mixture evenly on the plate, you can use your hand to do so. Add the dry fruits pieces on it and let it cool for 15 minutes.
Step 6: Cut it in the share of your choice and serve it.

Have a look at the recipe:

Ingredients (serves 2 people)

Milk – 1½ cups
Sugar – 2 tbsp
Basil seeds – 2 tsp
Ice cream – 2 scoops
Falooda sev – handful
Rose syrup – 2 tbsp
Pistachios – few, chopped for garnishing
Rose petals – few, for garnish

Directions

To make your home-made Falooda, start by soaking the basil seeds in water for 30 minutes. Drain once done. 


Pour some sugar into a pan with a cup and a half of milk in it. On medium heat, let it come to a boil after which you can lower the heat and allow it to simmer for approx. 5-7 minutes. 


Once it has simmered, you have to then chill it in the refrigerator until you see the milk turn slightly thick.


Now, you have to pour some water in a pan and allow it to come to a rolling boil. Once it has started boiling, add in the Falooda sev; give it 4-5 minutes to cook. 


Next step, drain the water and immediately rinse the Falooda sev with cold water so that cooking is halted. Now you have to summon your craft making skills. Take a pair of kitchen scissors and use them to cut them into approx. 1 inch pieces.


Your soaked basil seeds, chilled milk and sev are ready, it’s time to put together your Falooda.


To assemble the Falooda, take two glasses and add the basil seeds to it first.


Then top it off with the cooked Falooda sev.


To this, you must add a tablespoon of rose syrup in each glass.


You’re almost there! Now, pour the milk in it and watch as some of the basil seeds float to the top.


To this add a scoop of ice cream. 
It’s done. Just garnish it with chopped pistachios and rose petals and serve.

INGREDIENTS

2 cups - idli Rice (parboiled Rice)1/4 cup - Rice flakes/aval/poha3 to 4 cups - sour Butter milk1/4 tsp - cooking sodaAs needed - oil and salt

HOW TO MAKE SPONGE DOSA:

Soak washed rice and aval together, in buttermilk overnight.In the morning, drain the excess buttermilk if any, and grind to a smooth batter, a little thinner than the regular idli dosa batter.Add salt, cooking soda and mix well.Heat a tawa, pour a ladle full of batter and drizzle oil.Do not spread the batter.Cook covered over a medium flame for a minute.Super soft spongy dosa is ready to eat.Serve with a spicy chutney.
