Kerabu Togih Nanas - a modest, appetizing Vegetarian starter. .of blanched beansprouts, fresh pineapple cubes, Kerisik (toasted grated coconut), shallots, Bunga Kantan (ginger flower), toasted peanuts, Gula Melaka (palm sugar), fish sauce and a squeeze of lime.
Prep time: 15min. Cost: Under USD3 Serves 4.

Looks decadent? But it's low-carb, low-fat and zero meat. Thought I'd start the weekend off on a cheery note, with some fibre and a potpourri of textures and flavours. A fresh and fun summery breakfast platter like this only takes 10min to put together but can take up to two hours to finish. It's the weekend anyway so just take it slow and enjoy life as you should. Why not try making a similar one yourself using your favourite fruit, nuts and grains tomorrow to enjoy with the one you love? Something like this is most pleasurable when savoured out in the lovely morning sun, as I'm doing now, or at your favourite part of your home in an unhurried fashion, with your phone turned off.

Low-carb, no/pastry Quiche Lorraine. Just 5 ingredients - eggs, sun-dried tomatoes, Gruyere cheese, olives & Cayenne pepper. Prep time: 15min.

I popped this into the oven late last night, set temp at 180degress and timer for 15min and went straight to bed. Remember, after the oven shuts down, your quiche will still continue to cook and stay quite warm, depending what time you wake up.

Well, while I have my quick quiche brekky before heading out, you have yourself a lovely day!

Moussaka with a twist (why not?) served with Zoodles ( that's zucchini & carrot noodles tossed with vinaigrette made with Dijon mustard, honey, cider & Tahini)

A meat-free lunch I made using just egg, scallion, spinach, pesto, pasta, beans, tomato & mushroom. Great with a nice glass of Chardonnay.

Sometime back, I wrote a food series for The Malay Mail and one of the articles covered the benefits and many uses of this protein-rich local plant-based produce. Over the next week, I'll try to share with you some simple quick-to-fix snack ideas using the nutritious nutty-flavoured Tempeh.

We'll begin with a zesty, healthy salad using lightly-salted pan seared crouton-sized Tempeh on a bed of greens tossed in balsamic vinegar and honey. Makes a nice, appetising starter for lunch or a guilt-free late afternoon snack to go with a glass of Reisling.
