Braised Beef Brisket In Semur Style

One Of Popular Braised/stewed dish in Indonesia, β€œSemur Daging/Ayam” is a Slow-cooking food that has sweet, savory taste.

Basically, For this dish, we usually eat it with Steamed Jasmin Rice, but in this recipe, I put cubed potatoes and cook together with the beef.

So I bought 900 gram of beef brisket, seared, in every side.
So after I sear the beef, I put The beef into pot that boiling water already inside, together with salam leaves, lemongrass, ginger, galangal, kaffir lime leaves, Crushed garlic, crushed peppercorns, sauteed sliced onion, shallot, Sweet soy sauce, A spoonful of oyster sauce, and season with salt.
cook it with medium heat for about 2 hours. or till the beef is tender.when the time reach 1,5 hour put the cubed potatoes and cook it till the potatoes done.
And voilΓ  the picture is above, eat it with rice or potatoes. Sweet tender savory beef. Freakin tasty

Glad to be back!! yesterday, I made delicious rice bowl.
It's Indonesian style, "kari ayam bakar bowl". Basically, This is a grilled curried Chicken rice bowl, topped with "Dabu-dabu" or Indonesian salsa.

I'm using boneless Chicken Thigh for this tasty rice bowl. So before I grill this chicken, I made a marination or the spicy "bumbu" for the chicken, made from grounded shallot, onion, garlic, cumin powder, turmeric powder, coriander powder, Chili powder, salt And pepper. Sautee all the ingredients above with very little oil till the flavor comes out. I added coconut cream And yoghurt , And a pinch of sugar, mix well And set aside.

When the spices is cold enough, put the Chicken inside, keep in the fridge for about 45 min or an hour.

Get ready with the griller, heat it , you could use a pan and just pan fry it. When the griller hot , grill the Chicken until cook, And set aside.

For the dabu-dabu( Indonesian salsa)
Plum tomatoes, shallot, lime juice, coriander leaves, hot Chili , Cut tomatoes And shallot into dice, And Just chop the coriander, put everything in a bowl , mix it, add lime juice, salt And pepper.

Final touch is, take your individual bowl, for Single person, add rice, And the chicken(Slice or Cut it into a few Pieces) And Dabu-Dabu on top.

It is spicy-savoury dish, And so Good. πŸ˜‰

So I crave for Spicy noodle soup (And also for the dumpling)

Today's dinner is chinese origin, Not authentic, But close enough. It's Inspired by Chinese Hot pot.

So for This heavenly Earthy great noodle soup, I Parepared for the Chicken borth first.

Just regular chicken broth.

The Ingredients for the soup are

Chicken broth 1 liter
Sichuan peppercorn 1/2 tbsp
Dried chili 15 gr
Crushed garlic 1 clove
Star anise 5 gr
Cinnamon 1/2 small stick
Dried lime 2 pcs
Coriander powder 1/4 tsp
Cardamom 3 pcs
Oil for sautΓ©e
Chili bean paste 3 tbsp
Sesame oil 1tsp
Seasoning (salt, pepper and sugar)

To make this spicy soup it's easy, sautΓ©e the chili bean paste and add all dried item, just boil everything together at one time except for the sesame oil. Sumer it for about 25 min, and season with salt, pepper, and sugar and balance the taste of it. Add sesame oil at last.

The broth is ready, we're going to prepare for the veggies and dumpling, I used bok choi, bean sprout, spring onion, oyster mushroom, button mushroom, enoki take, Chinese cabbage, coriander leaves and shiitake. For dumpling, shrimp ball, meatball , fish tofu, squid ball , crab stick, and you can also add sliced chicken or beef, uh also for the noodles we can use anything, I used rice noodles.

For the dumpling is boiled, and vegetables are blanched.

Put everything inside the bowl, add the soup( boil it first) add coriander leaves on top to enhance the flavor.

Hi guys ! So today I'm going to share one of pretty popular dish from Japan.

So it's Sushi time πŸ˜‰
But this time, I am going to share SUPER CHEAP OR PRETTY LOW BUDGET Sushi. Wait...whaaaaat?

Yes, well it doesn't mean low quality, I just avoid raw fish (it's cheaper and some people might don't like raw fish, or maybe in your area nobody is selling SASHIMI GRADE FISH)

Raw seafood could be danger if the material itself sold or handled by careless seller. So this is the other option for you guys to make your own.

Sushi is definitely Rice based dish, here are my recipe of the Sushi Rice :

If you could find Japanese Rice (short grain, stickier) then use it for about 540 gr wash it until the water is really clear.
But, if you could not find any, you could use Jasmine Rice + glutinous rice it's 70:30 wash it till clear.

Both kind of Rice has to be soak for about 30 min - 1 hour. Why we have to soak it? It make the Rice well cook, like PERFECTLY COOK .

After you soak the rice, cook it , I suggest cook it with Rice cooker, the best way 😜. If you don't have Rice cooker there is another way in Japan called Gohan.

Gohan is Japanese cooking method to cook rice in the pot . The method is same , wash, soak then cook . The consistency of the water is just one line of your finger, that is the Asian way. Cook it until no water left. Switch off the fire, Then cover it with lid or aluminum foil , let it rest for about 15-20 min.

While you cook the rice, you gotta make a SHARIZU/ SUSHI SU it's the vinegar things.

My recipe is actually simple, is just SA SHI SU or we can call SATO (sugar) SHIO (Salt) SU (Vinegar) and Sometimes I make it the day before, and I also put Konbu on it and let it all night( you have to wipe the white dust all over konbu before use it)

The Ingredients of sharizu /Sushi su are:
1/3 Cup of rice vinegar (you definitely could substitute with apple cider, Love it!)
3 tbsp Sugar
1,5 tsp of salt
Konbu( optional)

Mix all together in a pot, medium fire until the well mix.


Let's start make sushi rice, to mix the rice and vinegar, Rice has to be still hot and the vinegar mixture is just warm, put rice in a large bowl or Japanese wooden style, spread it, add the vinegar, gently mix it. When it's done cover it with damp towel to avoid the rice is getting dry.


The base is ready, now you gotta prepare the filling and sauce.

These are what I use ;

Tuna (cook it, bake or pan fry, then cut it into small pieces) / Canned Tuna
Cucumber (seedless, cut into Jardiniere or Julienne)
Chicken (cook it, boil/roast/pan fry)
Mayonnaise
Avocado ( Slice it)
Kani stick( Imitated crab stick)
Frozen Ebi tempura( fry it)
Lolo roso/verde
Mixed lettuce
Carrot ( cut it into Julienne)
Nori
Bottled thick teriyaki sauce
Sriracha sauce

For me you may use anything for this kind of "Sushi"

Then you could start "rolling" the sushi, take nori, wipe your hands add rice, spread it add filling, uae whatever you want, but don't make it overfilling, it'll be hard to roll.
And last is , enjoy your Homemade Sushi

Do you guys know "YAKITORI"?
One of famous dish from Japan, it's grilled chicken in skewer .
So I am going to share this recipe with you guys, the source of this picture above is from myself, and this is my recipe.

So here are the Ingredients:

Chicken thigh
Spring onion (white part)
Ginger (ground)
Garlic (ground)
Salt and pepper
Pineapple purΓ©e


For "Tare" (basic sauce that you eat with, and as well for basting the chicken while it's grill)

Shoyu
Mirin
Sugar
Salt
Burnt spring onion
Burnt onion
Brown sugar
Chicken stock

And of course the skewers!

Making Yakitori is really easy, and my recipe is different than others, because I marinated chicken thigh with ginger and garlic paste, salt, pepper 10 gram of pineapple purΓ©e and shoyu.

From whole chicken thigh you could cut it into 6 or you could cut it more smaller.

Cut the spring onion(white part) for about 1.5 cm.

After that we could start to skewing the chicken and also the spring onion.

For the tare, boil the chicken stock, add shoyu(soy sauce), mirin, brown sugar, sugar , salt, onion and spring onion. Simmer it until the consistency is changed. It should thick, sweet , and savoury taste.

When everything is ready don't forget to switch on the griller, and we could start grill the Yakitori , when we grill it its fine to dip in the sauce then grill it again or just regularly basting it until cook.

When it's cook serve it with tare itself.

Yakitori ( YAKI means grill or cook in the flame , and tori means chicken)

What would you do if you are vegetarian and you are definitely picky?

Well, my advice is just create your own dish, fancy-looking yet tasty .

In frame is just mixed of grilled vegetables , grilled with olive oil. It's created by my friend.

This is the best vegetarian appetizer I've ever had.

Hello breakfast lover! So this dish looks so dam beautiful, but you know what?? It's extremely cheap. so, I bought frozen bagel from the supermarket, I defrosted it, and toasted. Then I made super easy Hollandaise sauce, Just beat 1 egg yolk add clarified butter , a bit vinegar and season with salt and pepper.
The filling is just regular sunny side up and baby spinach , I added some cheddar cheese as well to make it perfect!

The result is just like restaurant-made beautiful breakfast. Low budget and fancy stuff.

So today I created one of popular street food in Indonesia called "Mie/Mee Bakso" it's noodle soup with beef broth, veggie and meatball or beefballs.

The recipe is so simple.

Ingredients

For Broth :

Beef bones 200gr
Garlic
Fried shallot
Lemon grass
Spring onion
Water
Salt & pepper
Salam/bay leaves

Put the bones into large pot, add water, Salam/bay leaves, whole crushed garlic, lemon grass.
Cook it for about an hour or till the liquid is rich enough. Don't forget to remove the foam or dirt. Add fried shallot and spring onion to enhance flavour.

For beefballs/meatball :

Basically, Indonesian meatball is contain starch, so the texture is like rubbery or kinda soft chewy.

Beef (any part, with fat is better) grounded about 250 gr
Tapioca/sagoo 50 gr
Ice water (50ml)
Garlic (1 clove) mashed
Pepper (1 tsp)
Salt (to taste)
Nutmeg (to taste)

Mix all the Ingredients together untill well mix.
The texture is kinda dough.
Boil 750ml of water, use 2 spoon to forming the shape of the balls or you could use piping bag with quite big hole, then use spoon to make round shape. When you make that put direct into the boiling water. The meatball is cook when it's float.

So, when everything is ready you could prepare for the veggies, and noodles.
I am using fresh egg noodles, because it is so tasty and flavourful. Just boil it and put in a bowl. As well as the veggies, you could use bok choi, or any green veg, bean sprout( just slightly soak in hot water for a while)
Add the beef balls/meatballs, the broth and garnish it with fried shallot and sliced spring onion.

The easiest thing to enjoy "Mie bakso" is just visit Indonesia. You could find it EVERYWHERE! Enjoy guys πŸ˜‰
