Made this after an indoor workout: 25 mins! Quartered a handful of new potatoes, sprinkled with thyme, salt and pepper and roasted in oven on 425; Bowled 1 c water with half cup Jasmine rice and let simmer for 15-20 mins. During which I sautéed string beans, collard greens and snow peas in garlic and oil (in that order), for about 5-6 mins, until adding them to the roasted potatoes for a few more mins until it all crisped nicely. Threw it on top of the rice with sriracha and devoured it !
