Have you studied culinary arts / taken up formal education in cooking ? If so ..from where ? The reason I ask is because the way you experiment with food/dishes you prepare are simply amazing and with so much ease.

For 4 people (optional):

2 red onions
2 dl red wine
1 teaspoon muscovado sugar
1 dl water
1 clove garlic
1 tablespoon grated, fresh ginger
2 Rosemary sprigs 1 tsp nutmeg
salt, pepper, cumin

1. chop the onion into large pieces and let soften in a pan with butter.

2. When the onions softened, pour in the wine, sugar and squeeze in a garlic clove. Simmer together for about 10 minutes on low heat.

3. Pour in the rest of the ingredients and let simmer for about 20 minutes so that chutneyn becomes simmig.

3 cups pulled beef
6 ounces ounces cream cheese, softened
ยฝ cups salsa
1ยฝ cups grated cheese
1ยฝ cups chopped coriander
12 - 6 inch corn tortillas
vegetable or canola oil, for frying

Heat the oil in a sauce pan on medium heat.
In a large bowl mix all together the beef, cream cheese, salsa, cheese and coriander . Add salt and pepper to taste.
Once oil is hot enough (place hand over pan, above oil, to feel heat), add a few tablespoons of the mixture to the center of a tortilla and spread out. Roll up and set seam side down in oil using tongs. Cook until golden brown on both sides.
